Granny's Cornmeal Mush

Introduction

This is good for a hearty breakfast. Similar to Malt O Meal. You can chill this overnight and slice and fry the next morning. This is good for a hearty breakfast. Similar to Malt O Meal. You can chill this overnight and slice and fry the next morning.

Ingredients

    3 cups water
    1 cup yellow cornmeal

Directions

In a medium saucepan, heat 3 cups water to boiling. Reduce heat to medium; stir cornmeal into 1 cup cold water and blend well. Pour this mixture into boiling water. Cook, stirring regularly, until mixture is thick.
For frying, spoon cornmeal mixture into a lightly greased 9x5 inch loaf pan. Cover and refrigerate overnight.
In the morning, melt remaining tbs. butter in a skillet over medium high heat. Slice cornmeal mush into 1 inch wide slices. Cook in melted butter until golden brown on both sides.
You can also place slices on a cookie sheet and bake in the oven until golden and crispy.
