Garlic Tomato Soup

Introduction

I first had this soup in a little Indian deli in Eureka Springs, AR on a very blustery December day. It was so awesome! I talked to the waitress about the ingredients, and have recreated it the best I could. It tastes just as good as I remember. Number of Servings: 2

Ingredients

    1 t EVOO
    1/8 t cumin seeds
    1 clove garlic, minced
    1 can tomato soup
    Chicken broth, soup can full
    Morton's Hot Salt, or salt & cayenne pepper to taste
    1/2 t. dried cilantro

Directions

Warm the oil over low heat, not to the point of smoking. Add the cumin seeds and toast lightly. Add the minced garlic and very briefly saute. DO NOT BROWN.

Add the soup & broth and bring to a boil. Reduce heat, add the seasoning, and simmer about 10 minutes to let the flavors blend.

Makes 2 servings, or 1 big bowl. I usually can't resist eating the whole thing!
