"Healthified" Garlic Shrimp Pasta

Ingredients

8 oz Angel Hair,uncooked
4 cups baby spinach leaves
1.5 cup cherry Tomatoes, halved
3 tsp olive oil
1/2 cup chopped onion
14 oz raw large shrimp
3 cloves garlic, minced
1/4 tsp red pepper flakes
4 fl oz White Wine
1/4 cup chicken broth
Pepper to taste
3 tbsp fresh parsley, chopped
2 tbsp butter
Directions
Cook pasta according to package directions. Drain, return to pan. Add spinach, tomatoes and 2 teaspoons of olive oil.
While pasta is cooking, heat remaining oil to medium high in a 12-inch skillet. Add onion, cook and stir 1 minute. Add shrimp, garlic and pepper flakes, cook and stir 2 minutes.
Stir in wine, broth and pepper, cook 2 minutes or until shrimp are pink and firm. Remove from heat, stir in parsley and butter until butter is melted. Add to pasta mixture, toss to mix thoroughly and serve.
Makes 6 servings, 1 1/3 cups pasta each.
