1/2 cup whole wheat couscous
1 cup water
1/2 bell pepper, chopped
1 stalk celery, chopped
1 green onion, chopped
1/8 cup fresh mint, chopped
Juice 1/2 lemon
1/2 Tbsp extra virgin olive oil
1 tsp balsamic vinegar
1/4 tsp salt
Combine chopped vegetables, lemon juice, olive oil, vinegar, salt and pepper. Mix with couscous. Refrigerate for 1/2 or so.
