Introduction

Whole wheat couscous and fresh veggies! A "clean" salad! Whole wheat couscous and fresh veggies! A "clean" salad!
Number of Servings: 6

Ingredients

    1/2 cup whole wheat couscous
    1 cup water
    1/2 bell pepper, chopped
    1 stalk celery, chopped
    1 green onion, chopped
    1/8 cup fresh mint, chopped
    Juice 1/2 lemon
    1/2 Tbsp extra virgin olive oil
    1 tsp balsamic vinegar
    1/4 tsp salt
    Fresh pepper

Directions

Add 1 cup boiling water to couscous, cover and refrigerate for approximately 45 minutes.
Combine chopped vegetables, lemon juice, olive oil, vinegar, salt and pepper. Mix with couscous. Refrigerate for 1/2 or so.

  • I love tabouli, and with the addition of balsamic vinegar, this sounds very flavorful. The only thing the recipe is missing is 1/2 cucumber, chopped, and 1 cup tomato, chopped. Excellent! - 8/1/10
