I am always looking for recipes that taste like my favorite foods, but in the convenience of the crockpot. Pasta alla Norma is a recipe that I got from an Italian postdoc I worked with. Number of Servings: 4

Ingredients

    2 small eggplants, sliced into 1/2" slices
    6 cups your favorite spaghetti sauce (I make homemade)
    1/8 cup olive oil
    1/4 cup Italian breadcrumbs
    8 cups cooked fresh noodles
    ricotta salata (or semisoft goat cheese), crumbled

Directions

Slice eggplant. Pour olive oil in a lg bag and place slices in bag. Shake until coated. Add breadcrumbs and shake to coat. Pour 1 cup sauce in bottom of crock. Alternate slices on top pouring sauce over each row. End with sauce. Crumble cheese over top. Cover and cook at low for 6-8 hours.
