Black Bean Tortilla Bake

Introduction

Meatless main dish the whole family will love! Meatless main dish the whole family will love!
Number of Servings: 8

Ingredients

    3 garlic cloves, minced
    1 small onion, chopped (approx. 1 c.)
    1 - 8oz can tomato sauce
    2 - 14oz cans petite diced tomatoes
    2 - 15.5 oz. cans black beans, rinsed & drained
    1 T. chili powder
    1 T. cumin powder
    2 T. fresh cilantro, chopped
    salt & pepper to taste
    12 soft corn tortillas
    8 oz. lowfat (2%) shredded cheddar cheese

Directions

1. Preheat oven to 350.
2. Spray a large skillet with cooking spray.
3. Add garlic, onion and cook on med. heat until onion is tender.
4. Stir in tomatoes, tomato sauce, chili powder, and cumin, and cook additional 5 min.
5. Stir in beans, cilantro, salt & pepper.
6. Spray a 13x9 baking dish with cooking spray.
7. Layer 6 tortillas, 1/2 bean mixture, and 1/2 the cheese, repeat layers.
8. Bake 20 min. covered, then 10 min. uncovered or until bubbly.

Additional optional toppings: fresh cilantro, light sour cream, salsa.

8 servings.

  • I tried this and it tasted fairly delicious - unfortunately, I didn't have any real cheese, so I used some salsa con queso; this tasted great, but stopped the bottom from being crispy. I would definitely try again - 12/13/09
