Parmesan Chicken Pasta

Introduction

This dish is super easy to throw together using whatever veggies you have on hand. Our favorite is the "Spring Vegetables" mix with zucchini, peppers, and asparagus. This dish is super easy to throw together using whatever veggies you have on hand. Our favorite is the "Spring Vegetables" mix with zucchini, peppers, and asparagus.
Number of Servings: 4

Ingredients

    2 T olive oil
    2 small chicken breasts (boneless, skinless)
    8 oz Barilla Plus pasta (we like penne or rotini for this recipe)
    10 oz. frozen veggie mix
    4 c baby spinach leaves
    1/4 c. parmesan
    Tony Catcherie's seasoning blend (or seasonings of your choice)

Directions

Cook pasta according to package directions. Cut chicken into bite-size chunks and brown in skillet in 1 T olive oil, seasoning with Tony Catcherie's or other blend. Steam veggies while chicken is cooking. When chicken is done through, add 1 T olive oil, pasta and veggies to skillet and toss with a little more seasoning blend. Add the parmesan cheese and toss to combine. Turn off the heat and add the spinach, tossing to allow the heat to wilt the leaves a little.
