Lentil Soup

Ingredients

    2 packages Trader Joe's steamed lentils
    2 boxes Trader Joe's organic free range chicken broth (32 oz boxes)
    2 cups baby carrots - chopped in processor
    2 sweet onions - chopped in processor
    3 roma tomatoes - chopped in processor
    2/3 bunch cilantro - leaves only, chopped in processor
    8 cloves garlic - chopped in processor
    2 T grapeseed or olive oil
    salt and pepper to taste

Directions

1. Saute onions in oil in a large pot.
2. After about 2 minutes add in garlic and continue to saute until onions are translucent.
3. Add in remaining ingredients and cover.
4. When soup comes to a boil, reduce heat and allow to simmer for about 1 hour. Keep covered
5. Stir occasionally. Taste at end to determine need for salt and pepper.
Makes approximately 15 cups (I usually eat about 1.5-2 cups for a serving - so multiply accordingly)
