Mousse au Chocolat

Introduction

I love this recipe. It's great for parties with a lot of non-dieters because it's super rich, but you can eat it without guilt!

This is from the Gordon Ramsay book "La cuisine en toute simplicite." I'm sure there's an English version out there, and I highly suggest the book!

Number of Servings: 2

Ingredients

    33 grams Dark Chocolate, at least 60% coco
    2 eggs
    Dab of preferred alcohol: recipe calls for Grand Marnier, but I usually use whatever's handy.

Directions

-Melt the chocolate in a double-broiler or under very low heat. Be careful not to keep it on the stove too long, or it becomes hard again.
-Leave chocolate to cool.
-Separate the egg whites and beat them to stiff peaks.
-Mix the yolks into the melted chocolate and add the alcohol.
-Carefully fold the chocolate mixture into the egg whites until well mixed.
-place in two custard bowls/wine glasses and chill at least 3 hours before serving.

*Makes two servings of about 1/2 a cup

  • My mom used to make this when I was a kid, although she layered it with Nilla Wafers in a square dish (and didn't add the alcohol) and served it the next day. MMMMMMM so good then and I bet your "grown up" version would be just as good! - 4/28/09
