Introduction

Cucumbers, radishes, sweet onion, cilantro & fetta cheese with oil & vinegar Cucumbers, radishes, sweet onion, cilantro & fetta cheese with oil & vinegar
Number of Servings: 2

Ingredients

    1 medium/large cucumber, seeded & sliced
    1/4 cup yellow or white sweet onion, sliced thin
    1/4 cup radishes, sliced thin
    1/4 cup fresh cilantro, chopped
    2 oz reduced fat fetta cheese
    1 tsp olive oil
    1 Tbl vinegar

Directions

Seed cucumber, slice into half moon shapes. Slice onion and radish thin. Chop cilantro, crumble in reduced fat fetta cheese. Toss with oil and vinegar. Taste before salting, the fetta is usually salty enough. Makes 2 servings.
