Introduction

This is super easy and the recipe is found on the back of the Healthy Harvest Whole Wheat Wide Noodle package. My family loves it. This is super easy and the recipe is found on the back of the Healthy Harvest Whole Wheat Wide Noodle package. My family loves it.

Ingredients

    2T light margarine
    3/4 pound skinless chicken breast cut into 3/4 inch pieces
    1/3 cup finely chopped onion
    1 3/4 cups 98% fat free chicken broth
    2 Cups frozen peas and carrots
    1/2 Pkg. Ronzoni Healthy Harvest wide noodle uncooked
    1 can 98% fat free Cream of Chicken Soup
    3/4 Cup 1% milk
    3/4 Cup grated Parmesan Cheese, divided

Directions

In heavy 5-quart saucepan over medium heat, melt margarine; add chicken & onion. Cook 5 min or unitl chicken is no longer pink. Add chicken broth; heat to boiling. Stir in uncooked pasta and vegetables, stirring to coat evenly with liquid. Heat to boiling; reduce heat. Cover; simmer on medium heat 8 minutes, or until most liquid is absorbed, STIRRING OCCASIONALLY. Meanwhile, in medium bowl, stir together soup, milk, 1/2 cup cheese until smooth; stir in pasta mixture. Simmer until heated through. Serve sprinkle with remaining cheese. Makes 6 servings.
