Tamz Spicy Shrimp Stew

I cook pretty spicy. If you don't tolerate spices well, reduce to taste.I use organic canned tomatoes and vegetable broth. Both have sea salt for flavor. I cook pretty spicy. If you don't tolerate spices well, reduce to taste.

Ingredients

2 Tbs Olive Oil
4 Tbs Whole grain flour
1 Tbs Cayenne Pepper
1 Tbs Caribbean Jerk Season
2 Clove Garlic
1 med. Onion
1 each, Bell Peppers, red and green
2 C Blackeye peas
1 C Okra, cut
1 C Long grain brown rice
2 28 oz cans Diced tomatoes
32 oz Vegetable stock
16 oz Shrimp, small
Directions
In a large pot, heat oil over medium heat. Add onions, peppers and garlic and stir until onions are transparent. Stir in sifted flour.
Slowly stir in broth, add diced tomatoes and spices. Add in remaining vegetables and rice and bring to a boil. Stir thoroughly to keep rice from sticking. Reduce heat to lowest setting, cover and let simmer until rice is done, about 25 minutes. Stir in shrimp and cook until done, about 5 minutes.
Makes approximately 9, 2 cup servings.
Serve with foccacia bread.
