Easy Take Out Orange Chicken

Ingredients

    2 cups brown rice
    1lb chicken breast, cut into 1/2" pieces
    1 cup mandarin oranges
    1/3 cup orange juice
    1tbsp olive oil
    1 tbsp reduced sodium soy sauce
    1 tbsp honey
    1 packet splenda
    1 tsp grated ginger
    2 tsp orange zest
    3 cloves garlic, minced
    1/2 tsp cornstarch
    1/4 to 1 1/2 tsp red pepper flakes (to taste)
    salt & pepper to taste (not included in nutritional info)

Directions

Cook rice according to package instructions.

Meanwhile, in a small bowl combine orange juice, soy sauce, honey, splenda, orange zest, ginger, cornstarch and pepper flakes. Set aside.

Heat olive oil over med high heat, add garlic cook 30 seconds. Add chicken, sprinkle with salt & pepper, cook for 4-5 min or until no longer pink in center. Add juice mix & mandarin oranges , cook until thickened stirring constantly, about 1 min.
Serve over rice.
**note**
If your house is like mine and everyone likes a different level of spice, add 1/4 tsp of pepper flakes to juice mix, then sprinkle 1/4-1/2 tsp on those who want a little more kick.

    I love this recipe! I threw an orange in the food processor instead of juice and skipped the rice and oranges and just had this over some plain stir-fried veggies! YUM! I also added garlic to the sauce..Big hit with everyone, kids and adults! - 1/27/09

    I made this dish for dinner tonight, what a huge success! I have tried other orange glazed chicken recipes which my kids protested, but this was great! I didn't hear one word about not eating this! Thank you for such a great recipe! I will definitely be making this again!! - 5/21/09

    This was great! So quick and easy ingredients to keep on hand! I made it with the brown rice (which took longer to make than the chicken!) and then steamed snap peas in the microwave. - 12/16/08

    Very easy and very taste!!! I did it with pork and because of money I left out the oj and ginger. And it came out wonderfully! I threw the manderine orange in my food processor, omg! even my husband liked it! Definatly making it again. - 5/14/08

    I just made this and it's absolutely wonderful! Oddly enough, I just saw an ad on tv for orange chicken from a local Chinese restaurant. This is better by far, cheaper, and so much healthier. This was so easy and the spices were just right. Thanks for sharing it. - 2/8/10

    I really liked this dish. It was simple to prepare and very low in calories. I did add sauteed celery and onions to cut down on the sweetness. Was it as good as take-out ----no, but very good for a lightened dish. I will make it again. - 1/9/10

    The entire family was thrilled with this recipe and demanded that I add it to our regular menu. I did add more cornstarch to thicken the sauce a bit more. I put brown rice in the bowls, a layer of broccoli and then the chicken on top. The sauce dripped down and flavored everything. Fantastic! - 2/10/10

    WOW!!! I would take this over any restaurant orange chicken ANY day! Yumm - I can't wait to make it again. My kids thought even 1/4 tsp red pepper flakes was too much (I sprinkled extra over my portion) but I will just keep making it so they get used to it. It's really not too spicey! :) - 1/16/10

    My 7 year old was quite happy as he helped me make this. He ate every bit of his and said, it smelled great... We used some ginger from a whole foods market and really was tasty. I' m not sure if the oranges were supposed to resemble oranges, or if I just cooked it longer than I was supposed to. - 1/13/10

    YUMMO, this was AWESOME...it presents just like PF Chang's Lemon Chicken (except it was orange, LOL). I can not WAIT to make this again! The recipe does not say what to do with the actual mandarin oranges, so I added them right at the end of the chicken cooking (in the pan). FABULOUS!!! - 4/9/09
