Clean Eating Lentil Salad

Introduction

From the Eat Clean Diet Cookbook, but with a little twist.(aka I didn't have everything they called for) From the Eat Clean Diet Cookbook, but with a little twist.(aka I didn't have everything they called for)
Number of Servings: 4

Ingredients

    3C water
    1C dried lentils
    2Cloves garlic,chopped or pressed through garlic press

    1/2t dried thyme
    3bay leaves
    1/4t sage
    1C peeled and chopped carrots
    1C frozed cut green beans
    1/2C onion,chopped


    Dressing:
    3T rice wine vinegar
    1C cherry tomatos, chopped
    1Clove garlic,chopped
    1/2T dried basil
    1/2T dried oregano
    S&P to taste

Directions

1) In a large saucepan place water, lentils, garlic, thyme, bay leaves and sage. Bring to a boil and reduce heat. Countinue to cook for 20min,covered. Lentils should be chewy, not soft.

2)Add the carrots and onions and cook for 5min

3)Add the green beans and cook for 5minutes more.

4)Remove from heat. Drain cooking liquid. Place lentil into a serving bowl. Remove bay leaves.

5) In a small bowl combine rice wine vinegar,tomatos,garlic,basil,oregano and S&P. Whisk briefly and pour over lentils. Toss all ingredients lightly until just combined.

6)serve warm or chiled.
