Ingredients

1 Cucumber (2 cups), washed and grated
1/2 cup Red Pepper, finely diced
1/2 cup Scallions (green onions), chopped
(opt. 1 Tsp. dry ginger) (99 calories w/o)
2 Tbsp Honey (Agave for vegans)
2 .8g packets True Lime (or lime juice for vegans - will be more juicy)
Directions
Rough grate cucumber and mix with finely diced red pepper and green onions. Mix in 2 tablespoons of honey and 2 packets of True Lime powder - for a little kick (optional) add 1 teaspoon of dried ginger. Stir.
