Oven Roasted Potatoes, Peppers, and Onion

Introduction

Really great side that is easy and combines both the starch and the veggie. Kind of spicy, though. Really great side that is easy and combines both the starch and the veggie. Kind of spicy, though.
Number of Servings: 4

Ingredients

    2 medium sized pototoes, each cut in to 8 wedges
    1 medium red bell pepper, cut into 1/2" wide strips
    1/3 c. sliced onion
    1 1/2 t Extra Virgin Olive Oil
    1 t garlic, minced
    1/4 t cayenne
    1/4 t crushed red pepper flakes
    salt to taste
    black pepper to taste

Directions

Pre-heat oven to 400.

Mix together all of the ingredients. Place on a large baking sheet so that is all in a single layer (if the pan is not non-stick, add a misted layer of Extra Virgin Olive Oil cooking spray.

Cook for 15 minutes, flip all veggies over, and bake for another 15 minutes.

Serves 4
