Chicken Cordon Bleu

Introduction

This is a really yummy way to feel like you got a gourmet meal without guilt! This is a really yummy way to feel like you got a gourmet meal without guilt!
Number of Servings: 1

Ingredients

    1 Chicken Breast Per Person
    6 Pieces of Ham per person
    1 Slice of low fat Swiss Cheese per person
    Less then 1/3 of a cup of seasoned bread crumbs.

Directions

Use Wax paper over Chicken breast and Pound it down so it is thinner. (Chicken Cutlets would work well with this also)
Sprinkle both sides of chicken with a little bit of seasoned bread crumbs. I prefer Tilaro's Italian Flavored Bread Crumbs.
place Swiss cheese down on chicken. Place all 6 pieces of ham along the swiss cheese. Fold the chicken over and place in oven for about an hour. Check with thermometor or cut into the chicken to make sure it is not pink.
Make 1 per person.
You can also make this a night ahead and place in fridge so when you get home from work all you have to do is put it in the oven.
