Beef Stir Fry

Ingredients

    1 tsp extra virgin olive oil
    120g/4oz blade/round steak cut into strips
    1/3 cup green onions, chopped
    1.5 cups green, red & yellow capsicum, cut into strips
    3 small cloves garlic
    2 cups/150g mushrooms, chopped
    175ml/0.75 cup reduced sodium beef stock
    1 Tbsp fresh basil
    S & P

Directions

1. Coat a non-stick pan with cooking spray and place over medium heat.
2. Add beef and stir fry for 3 minutes. Remove from pan and set aside.
3. Heat oil and stir fry vegetables for 2 minutes. Add broth, reduce heat and simmer for 3 minutes.
4. Return beef to pan and cook for 2 minutes. Add basil, salt and pepper.
