Crustless Broccoli Quiche

Introduction

This is an old standby I have used for years, that I originally got off the internet, but have since forgotten the source. The original used low fat swiss cheese and leeks, instead of cheddar and broccoli, but you can use whatever you've got on hand. I usually eat it with a veggie side and a slice of multigrain bread. Number of Servings: 6

Ingredients

    4 egg whites, plus 1 egg yolk
    1 1/3 cup skim milk
    3/4 cup Heart Smart Bisquick
    Half an onion, chopped
    1 1/2 cup chopped Broccoli
    4 oz 50% light cheddar cheese, grated
    1 tsp dry mustard (optional)
    salt and pepper to taste.

Directions

Preheat oven to 400F. Spray the bottom of a large pie plate with cooking spray. Add onions, broccoli, and grated cheese to the pie plate and mix (your hands work well for this).

In a medium bowl mix milk, egg whites, egg yolks, Bisquick, and spices with an electric mixer until the Bisquick is incorporated.

Pour the liquid over the cheese & veggies in the pie plate. Cook in the oven for 25-35 minutes until cooked through. Quiche may puff during baking but will settle as it cools.

*Note: I have often baked this at 350F when other stuff is in the oven for 35-40 minutes.
