Stuffed Chicken

Introduction

Absolutely delicious filling! Same as recipe posted by ALISON_T; but with the ingredients slightly adjusted to give the calorie count I wanted. Next time I will pound the chicken and marinate it for a few hours in the olive oil/lemon juice/ herb mixture to incorporate even more flavor. Absolutely delicious filling! Ingredients

    2 large boneless skinless chicken breasts, about 1 1/4 - 1 1/2 pounds
    1/4 c. Hellman's light mayo
    1/2 c. crumbled feta cheese
    3 cloves garlic
    1 (16 oz.) bag of frozen spinach, thawed and drained
    4 slices Oscar Mayer Center Cut bacon (lower fat)
    1/2 T olive oil
    2 T lemon juice
    salt, pepper, other dried spices as desired (I used Spice Hunter's All Purpose Chef's Shake)

Directions

Blend the mayo, spinach, feta and garlic.

Pound chicken breasts and cut into 4 pieces roughly the same size.

Divide spinach mixture evenly between the breast pieces; place in middle of each piece.

Secure each piece with a toothpick (filling side down). Place in a shallow baking dish.

Mix together olive oil and lemon juice; brush over the breasts. Sprinkle liberaly with seasoning as desired. Cut bacon slice in half and place 2 halves over each piece of chicken.

Bake for 1 hour at 375 degrees, or until chicken is no longer pink.

Makes 4 servings.
