Chicken w/ Artichokes & Mushrooms

Ingredients

    Whole or cut up chicken
    College Inn White Wine & Herbs 99% Fat Free Chicken Broth
    Package sliced baby portabello mushrooms
    Package frozen artichoke hearts
    6 Campari tomatoes, diced
    Olive Oil
    Seasoning of choice
    Whole wheat pasta

Directions

Prepare whole or cut up chicken for crock pot. Add desired seasonings and 2 cups of the chicken broth and cook on low. Remove chicken from bone. Strain and reserve broth from crock pot. Discard skin and bones. In a skillet saute' shallots, mushrooms and tomatoes in 2 tablespoons of olive oil. Add thawed artichoke hearts and chicken. Season to taste. Heat through while pasta is cooking. Makes 8 servings.
