Drake's Mixed Vegetables with Pineapple

Introduction

This is a great way to spice up boring vegetables and add a sweet tangy flavor. This is a great way to spice up boring vegetables and add a sweet tangy flavor.
Number of Servings: 10

Ingredients

    1/2 medium onion raw (102.5g or 3.6oz)
    1 green pepper (113.4g or 4 oz)
    1-1/2 Butternut Squash (229.7g or 8.1 oz)
    1-1/2 Zucchini Squash (130.4 g or 4.3oz)
    4 Carrots Raw (121.9g or 4.3oz)
    1 Roma Tomato (63.4g or 2.2 oz)
    2 cloves of garlic
    1/3 cup Olive Oil
    2 cups of Pineapple (150.3g or 5.3oz)

Directions

1) Slice all of the vegetable, mince the garlic, dice the tomatoes and pineapple.

2) In a frying pan add all of the ingrediants and stir while cooking over medium heat on the stove top uncovered. Cook until soft

3) Makes 10 - 1/3 cup servings. I have added the grams and ounces for those of you who like to use the scale. We use fresh vegetables from our garden so each vegetable has different weights. You can add or take away whatever vegetable you want. Have Fun
