Southwest Tamale Cassarole

Introduction

This is a really tasty, easy to make receipe that everyone in the family loves. I serve it with cornbread. This is a really tasty, easy to make receipe that everyone in the family loves. I serve it with cornbread.
Number of Servings: 6

Ingredients

    1 medium onion, chopped
    3 cloves garlic, minced
    1 tbsp olive oil
    1 lb ground turkey
    6 tsp Lawrey's Taco Seasoning
    1 can Bush black beans, undrained
    1 can sweet corn, drained
    1 can stewed tomatoes, undrained
    1 can black olives, pitted, drained
    1/4 cup cheddar cheese, shredded
    4 oz, mozzarella cheese, shredded

Directions

Saute' onion and garlic in the olive oil, about 3 minutes. Add ground turkey and brown, about 5 minutes. Add Taco Seasoning, black beans, corn, olives and stewed tomatoes. Cover and simmer for 15 minutes, stirring occasionally. Just before serving mix in the cheese.

Variation: do not add cheese to the mix. Pour mix into a baking dish or a cast iron pan. Top with corn bread mix. Bake on 325 until corn bread begins to turn golden on top. Spread cheese over top, and cook til browned. Corn bread will be moist on side touching filling.

Serves approximately 6 1-cup servings.
