Shrimp Scampi

Introduction

Ingredients

    14 oz. raw, peeled, deveined, thawed shrimp
    1 t EVOO
    1/8 t. salt
    1/8 t. black pepper
    6 cloves garlic, minced
    1/3 c. dry white wine
    2 T lemon juice
    2 T butter
    2 T fresh parsley, chopped

Directions

Put shrimp, extra virgin olive oil, salt and pepper in a big plastic storage bag (I suggest one with a zipper) and toss to coat. Make sure that you have all other ingredients chopped, measured and ready to go before you start.

Heat a medium skillet to high. Put in half of the shrimp and cook until starting to turn pink, about 2-3 minutes, and add half of the garlic. Cook for another 2-3 minutes. Put into medium sized serving dish, and cover to keep warm. Complete the same process with the other half of the shrimp and garlic.

In that same pan, pour in the lemon juice and wine. Cook for 2 minutes, and then turn down to low. Add half of the parsley and all of the butter. Still until the butter is melted. Add to the shrimp and stir to coat.

Garnish with rest of the parsley. Serve immediately.

Makes three-four servings.
