4 large or 5 medium red peppers.
8 oz fat free cream cheese
8 oz neufchatel cheese (low fat cream cheese)
3 tablespoons sour cream
Salt, Pepper, garlic powder to taste
Peel the peppers, remove the stem and seeds.
Place the peppers, cream cheeses and sour cream into food processor and process til smooth. Scrape out into bowl, add salt, pepper and spices of your choice. This one can be Mexican-ish with the addition of garlic and cumin or Italian-ish with basil.
1 serving equals 2 tablespoons.

Soooooo delicious I cant believe I made it!! LOL!! Made 2 changes though.... used jar roasted red peppers instead of making my own & used a packet of lipton vegetable mix (instead of salt, pepper, garlic) for added flavor! SOOOOO YUMMY!!! Will definitely be a staple recipe when entertaining!!! - 7/18/10
