Introduction
I never EVER thought I could eat banana bread without downing an insane amount of fat and calories. This recipe is pretty amazing because you get a nice FAT CHUNK of sweet banana bread for not a lot of calories--and it has almost 4 grams of fiber to boot! Ingredients

1 1/4 cups whole-wheat flour
1/4 cup all-purpose flour
3/4 cup Splenda No Calorie Sweetener (granulated)
1 1/2 cups mashed ripe bananas (about 3 bananas)
1/2 cup fat-free liquie egg substitute
1/2 cup no-sugar-added applesauce
2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon salt
Optional Toppings-not included in nutritional info- Cool Whip Free, I Can't Believe It's Not Butter! Spray
Directions
Preheat oven to 350 degrees. In a large mixing bowl, combine both types of flour, Splenda, baking powder, cinnamon and salt, mix well.
In a medium mixing bown, combine mashed bananas, egg substitute, applesauce, and vanilla extract. Mix thoroghly. Add wet mixture to bown containing the dry ingredients and still until just blended.
Spoon batter into large loaf pan (9x5) sprayed with nonstick spray. Bake for about 50 minutes, or until knife inserted in middle of loaf comes out clean. Alow loaf to cool slightly, cut into 8 slices. Spritz with some spray butter or spread Cool Whip Free just before serving if you like. YUM!

I have made this a few times, and I like it! I cut the splenda back to .5 a cup - still has a bit of an aftertaste, I may use .25 c sugar & .25 c splenda next time. Found it was too dense in a loaf pan & too thin in a 9 x 13 pan - the muffin idea is my next try. Also, I use real eggs. Very good! - 1/3/11

I liked the basic recipe and the amount of bread you get for the calories is good - filling. I would definitely cut down on the Splenda because mine came out too sweet, but not in a good way, kinda that "sickly sweet weird" way. I would also cook for a little longer. Thanks for the recipe. - 7/29/09
