Introduction

I never EVER thought I could eat banana bread without downing an insane amount of fat and calories. This recipe is pretty amazing because you get a nice FAT CHUNK of sweet banana bread for not a lot of calories--and it has almost 4 grams of fiber to boot! Ingredients

    1 1/4 cups whole-wheat flour
    1/4 cup all-purpose flour
    3/4 cup Splenda No Calorie Sweetener (granulated)
    1 1/2 cups mashed ripe bananas (about 3 bananas)
    1/2 cup fat-free liquie egg substitute
    1/2 cup no-sugar-added applesauce
    2 teaspoons baking powder
    1 teaspoon vanilla extract
    1/2 teaspoon cinnamon
    1/2 teaspoon salt
    Optional Toppings-not included in nutritional info- Cool Whip Free, I Can't Believe It's Not Butter! Spray

Directions

Preheat oven to 350 degrees. In a large mixing bowl, combine both types of flour, Splenda, baking powder, cinnamon and salt, mix well.
In a medium mixing bown, combine mashed bananas, egg substitute, applesauce, and vanilla extract. Mix thoroghly. Add wet mixture to bown containing the dry ingredients and still until just blended.
Spoon batter into large loaf pan (9x5) sprayed with nonstick spray. Bake for about 50 minutes, or until knife inserted in middle of loaf comes out clean. Alow loaf to cool slightly, cut into 8 slices. Spritz with some spray butter or spread Cool Whip Free just before serving if you like. YUM!

    I found this in the HG cookbook today, and in honor of my favorite blueberry banana smoothie-used Mott's Harvest Delight no-sugar added applesauce in in Blueberry Delight and a cup of blueberries. It added 10 calories to the final number. YUM!!!!!! - 6/1/09

  • I have made this a few times, and I like it! I cut the splenda back to .5 a cup - still has a bit of an aftertaste, I may use .25 c sugar & .25 c splenda next time. Found it was too dense in a loaf pan & too thin in a 9 x 13 pan - the muffin idea is my next try. Also, I use real eggs. Very good! - 1/3/11

  • I really like this bread. I agree with other's it is more dense. I used less Splenda than it called for, and it came out perfect. I also cooked it longer. I would definately make this again. I also used I can't believe it is not butter spray on it! Yum! - 3/28/10

  • This cake is very good. Brought it to the guys at the office and it didn't last long. I cut it in 12 slices so, the calories went down.

  • Pretty good. I accidentally let it sit in the pan too long, and it got a bit soggy (and I think this particular bread probably seems a bit dense already) so we toasted before we ate it. I added 3 T of ground flax seed, and subbed 1/2 cup of the splenda for splenda brown sugar. - 2/13/10

  • I liked the basic recipe and the amount of bread you get for the calories is good - filling. I would definitely cut down on the Splenda because mine came out too sweet, but not in a good way, kinda that "sickly sweet weird" way. I would also cook for a little longer.   • I changed the recipe a little, using all whole wheat flour. I divided the batter into 12 muffin cups instead of the loaf pan, making the recipe into 12 servings instead of 8 and baked fr 35 minutes. My kids LOVED them!!! They were very good. - 7/20/09

  • O.k this was just awsome, I made a few changes I could not get the egg substitue so I used 3 small eggs and 1/4 gup swelvty and I add ed 1cup raisin and 1/4 cup almond it was just great. I will be doing this allot, my husband and all my co-workers just loved it - 6/3/09

  • Yummy yummy yummy! I didn't have Splenda No Calorie sweetener, but I did have the Splenda Brown Sugar Blend, so I used 1/2 cup of that instead. Also added 1/4 cup walnuts. It ups the calories by about 25 per serving, but I love banana nut bread so it was worth it. I also cut the salt in half. - 5/8/09
