Crispy Chicken Slenders

Modified from Fitness Magazine. Tastes great! Little bit of sweetness from honey and corn flakes! Add some heat to the flake or the honey mixture! I needed the whole 3 cups to cover my chicken - i did tenders the first time - i wont do that again! Cut up whole breasts instead! Modified from Fitness Magazine. Tastes great! Ingredients

    12 ounces sinless, boneless chicken-breast halves

    1 egg - slightly beaten
    1 tablespoon honey
    1 teaspoon prepared mustard
    2-3 cups cornflakes, finely crushed (add cayenne pepper and red pepper flakes)

Directions

1. Preheat oven to 450. Cut chicken into 3X3/4 inch strips. In a shallow dish, combine egg, honey, and mustard.
In another dish, stir together cornflake crumbs and hot pepper.

2. Dip chicken strips into the egg mixture; roll in crumb mixture to coat. Arrange chicken strips on an ungreaed baking sheet. (They do stick a bit)

3. Bake about 12 minutes, or until outsides are golden and chicken is no longer pink.
