Turkey Skillet Lasagna

Introduction

This is a fairly quick way to make a tasty treat.
Feel free to substitute any italian seasoning or your own herbs for the Pampered Chef seasoning blend.

Also, I used dried minced onion flakes, but some people may prefer a small fresh onion.

Ingredients

    16 Oz Ground Turkey
    4 Garlic Cloves Pressed
    2 tsp onion powder or 1 tbsp minced dried onion flakes
    1 Regular Sized Can Hunts Tomatoes with Italian Seasoning
    1 14 oz can of Tomato Sauce
    4 Tbsp Italian Seasoning
    Pepper & Salt (or Garlic Salt)
    1/2 Box Whole Wheat Penne Pasta 8 oz or 2 cups
    2 Cups Water
    8 oz LowFat Part Skim Ricotta Cheese
    1 egg
    1/4 cup Parmesan
    1 Cup Fat Free Mozzarella

Directions

Add the pressed garlic, the meat and the minced onion to a skillet over medium heat, cook the meat until the pinkness is gone. With this lowfat cut of meat, its not necessary to drain. Add in tomatoes, tomato sauce sauce, italian seasoning, and salt & pepper to your taste. I use garlic salt, because I love garlic. Mix together and then add in uncooked Penne. Bring to a quick boil, and then reduce heat to medium, let simmer 15-20 minutes. Keep an eye on it so it doesn't start to stick or burn.

In a small bowl grate 1/4 cup of parmesan and mix in the lowfat ricotta, and then mix in the egg.

After your 15-20 minutes is up, drop the ricotta mixture over the top, cover and cook 3 more minutes, serve up garnished with some of the mozzarella.

This can make anywhere from 6-8 servings. I calculated based on 8, because I usually get 8 out of it. If you only get 6 out of it, just put in 1.2 servings for proper calculation.
