Introduction

Number of Servings: 6

Ingredients

    1 lb. extra lean ground beef
    1 medium onion (chopped)
    1 cup bell peppers (chopped) (I use frozen)
    1 medium head green cabbage sliced/shredded
    1/2 cup long grain brown rice
    1 1/2 cup low sodium tomato juice
    grated black pepper to taste

Directions

Makes 6 servings
Preheat oven to 350
Brown ground beef with onions and peppers, drain fat if necessary
Stir in Brown Rice and Tomato Juice
Layer Cabbage and ground meat mixture in a baking dish
Cover and bake for 90 mins
Pepper to taste

  • I will probably use ground turkey in this recipe but it sounds really yummy and I can't wait to try it. Wonder how well it freezes....could be an easy make ahead meal too! - 3/25/07
