Introduction

Use non fat home made cheese! Use non fat home made cheese!
Number of Servings: 6

Ingredients

    16 oz frozen Spinach
    I recipe non fat paneer cheese( SparkPeople recipe)not included in nutritional values
    3 T Olive oil, divided
    2 med onions, chopped
    2 T each of minced garlic and ginger
    1 14 oz can petite diced tomatos
    2 t Garam Masala powder
    1 t cumin
    2 t Coriander powder
    1/4 t Cayenne pepper
    1/4 t Smoked paprika
    1/4 t Tumeric
    Salt to taste

Directions

Saute onions in 2T oil until translucent. Add garlic and ginger, stir until fragrent. Add the spices, spinach, and tomatos, let simmer 15-20 mins.

Meanwhile, cut the paneer cheese into bite sized chunks, and gently fry them in the 1 T olive oil until golden brown and slightly crispy. Add this to the spinach mixture, stirring gently.

Serve with optional rice or Indian breads.
