Introduction

I was at the grocery store and decided to just buy a mixture of things and put them together. My entire family will eat this and using turkey bacon and lower fat cheese makes it healthier but still yummy! I was at the grocery store and decided to just buy a mixture of things and put them together. My entire family will eat this and using turkey bacon and lower fat cheese makes it healthier but still yummy!

Ingredients

    9oz boneless skinless chicken
    5 strips bacon
    1/3 cup chopped onions
    1/2 cup chopped bell pepper
    1/2 cup sliced carrots
    2 red potatoes (1" cubes)
    1/4 cup shredded cheddar cheese

Directions

~Preheat oven to 375 degrees F.
~Prepare all vegetables and split into 3 foil pouches. Add your choice of seasoning (I use salt, pepper, oregano and celery salt). fold into pouches and place on cookie sheet.
~Split chicken into 3oz fillets and wrap with 1 1/2 slices of bacon each. Wrap in foil and place on cookie sheet.
~Bake for 30 minutes and sprinkle cheese on top of bacon wrapped chicken.
