Ingredients

    8 oz tomato paste
    1/2 c dry red wine
    1/2 water
    1 clove garlic, minced
    1/2 tsp dried basil
    1/4 tsp dried oregano
    1/4 tsp salt
    16 oz ground turkey
    1 c oatmeal
    1/4 liquid egg substitute
    1/2 c shredded zucchini

Directions

Preheat oven to 350.

Mix tomato paste, wine, water, garlic, basil, oregano, and salt in small saucepan. Bring to boil, reduce heat to low. Simmer uncovered 15 minutes.

Combine turkey, oatmeal, egg, zucchini, and 1/2 cup of tomato mixture in large bowl. Mix well. Shape into a loaf and place in ungreased loaf pan. Bake 45 mins. Discard any drippings. Pour 1/2 cup of tomato mixture over top, bake another 15 mins.

Place on serving platter, cool for 10 mins before slicing. Serve remaining sauce on side.
