Fruity oatmeal bake

Introduction

This uses real steel cut oats, not instant or rolled. It is adapted from a Moosewood recipe that calls for currants or raisins and salt. Use whatever fruit calls to you. I have tried apples, peaches, pears, and craisins. All of those worked nicely. This uses real steel cut oats, not instant or rolled. Ingredients

    3 Cups milk
    2 Apples cored and chopped (I don't peel)
    1/4 cup dark brown sugar
    1 cup steel cut oats
    1/2 tsp pumpkin pie spice or cinnamon
    1/4 tsp ground ginger (more if you like a zing!)

Directions

In a large saucepan, heat the milk so that it is not quite boiling. Add the apples, and sugar as it is heating. (I chop the apples directly into the pan)

Add the oats, sugar, and spices and stir well. Heat until just boiling and pour into a heat proof casserole dish. (I use a 9x13 Pyrex) Cover with foil, and bake at 375 for 25-30 minutes.

Serve hot, or if you allow it to cool completely, it can be sliced into bars.
Makes 8 servings or a dozen bars. (nutrition info is for breakfast oatmeal 8 servings)
