Vegetarian soft tacos

Introduction

These were delicious! I served them on warm whole wheat tortillas - about 200 calories for the whole meal, and soooo good. These were delicious! I served them on warm whole wheat tortillas - about 200 calories for the whole meal, and soooo good.
Number of Servings: 6

Ingredients

    1/4 cup onion, chopped
    1/2 jalapeno pepper, chopped (or more to taste)
    1 red bell pepper, chopped
    1/4 cup fresh cilantro
    1 package Smart Ground veggie protein crumbles

Directions

1. Lightly spray saute pan with low-fat cooking spray
2. Saute the onion over medium heat until soft
3. Add the peppers and cilantro, let cook ~2 minutes
4. Add the veggie crumbles
5. Stir and cook for another 4-5 minutes

Serve on a whole wheat tortilla. Makes 6 servings.
