    12 lg shrimp (8 oz)
    3/4 c diced orange bell pepper
    1/2 lg tomato, diced (about 140 g)
    1 T olive oil
    1 garlic clove, minced
    1/2 c shredded mozzarella
    1 c cooked jasmine rice
    1 t basil (or to taste)


Cook rice according to package. Divide 3/4 c cooked rice onto 2 plates.
Sautee shrimp in garlic and oil until cooked through. Divide and arrange over rice.
Sprinkle with shredded cheese.
Heat peppers until hot. Spread over plate.
Heat tomato and basil together. Lay over the top.
Ser ve.
