Introduction

I seen this recipe for Southwest Tamale Cassarole and made some changes added my own flare I seen this recipe for Southwest Tamale Cassarole and made some changes added my own flare

Ingredients

    Tamale Mix

    Onions, raw, 1 medium diced
    Garlic, 3 tsp minced
    Extra Light Olive Oil, 3 tbsp
    Honeysuckle White Extra Lean Ground Turkey 99%fat free, 16 oz
    Diced Tomatoes and Green Chilies, 1 can
    Yellow Sweet Corn, Canned, 1 can
    Bush's Chili Beans, 1 can
    Taco Seasoning, 6 tsp low sodium if you can find it

    Corn bread topping

    Jiffy White Cake Mix 1/5 pkg, 5 serving
    Jiffy Corn Muffin Mix 1/4 cup, 6 serving
    Egg, fresh, 2 large
    Light Vanilla Soy Milk, 7 oz

Directions

chop and dice onion and garlic

add to a 12" cast iron skillett saute in oil 3-5 mins or until onions are semi clear

add turkey and brown add taco seasoning and mix well.

add in corn tomatoes and green chilies

drain beans and lightly rinse and add to turkey mix cover and simmer for about 10 mins

while that is simmering mix your jiffy cake and muffin mixes together as per box

top the mix in the cast iron skillett with your corn bread mix and bake 350 for 20-25 mins

cool and cut into 8 equal peices and serve with any toppings you choose cheese, sour cream, or even salsa
