Creamy Chicken Enchiladas

Introduction

This is my sister-in-law's recipe, that I changed to make more low fat. :) It's my husband's all time favorite meal. This is my sister-in-law's recipe, that I changed to make more low fat. :) It's my husband's all time favorite meal.
Number of Servings: 8

Ingredients

    8 to 10 96% fat free Flour Tortillas
    4 boneless, skinless chicken breast
    1 sm can diced green chiles
    3 cans low fat cream of mushroom soup
    16 oz fat free sour cream
    1/2 C 2% shredded cheddar cheese
    1/4 cup chopped green onions (scallions)

Directions

Boil chicken breasts in water for one hour. Drain and cut up or shred.



Mix soup, sour cream, green chiles and onion thoroughly. Add chicken.



Coat bottom of 9x13 pan with a little sauce. Put 2 heaping tablespoons of chicken mixture on tortilla. Roll and put in pan.



spread any remaining mixture on top of enchiladas and sprinkle with cheese.


Bake at 400F for 30 minutes.



makes 8 to 10 servings, 1 enchilada each.
