Leftover Rice Pilaf

Introduction

I created this dish with some leftover rice and other ingredients I had on hand. It was very tasty, so I decided to share it. I created this dish with some leftover rice and other ingredients I had on hand. It was very tasty, so I decided to share it.
Number of Servings: 2

Ingredients

    1/2 Tbsp vegetable oil
    1 Tbsp pine nuts
    2 Tbsp raisins
    1/2 cup grated carrots
    1/2 cup shredded cabbage
    1/2 cup cooked rice (can be leftover)
    salt and allspice to taste

Directions

Put pine nuts in dry pan on low heat; stir frequently until lightly toasted. Add oil and raisins and heat slightly. Add carrots and cabbage and heat until they are "wilted", stirring frequently. Add rice, salt and allspice and heat through, stirring frequently. This goes together very quickly and can be ready to eat in 10 minutes. makes 2 servings.
