Introduction

I made this because my hubby wanted spaghetti with meat sauce, and I don't eat meat. A ragout-type sauce sounded better, especially with all the extra veggies. Enjoy!! Ingredients

    1 package Morningstar Farms Veggie Crumbles
    2 medium zucchini, diced
    1 medium onion, diced
    1 red bell pepper, diced
    1/4 c minced garlic
    8 oz sliced crimini mushrooms
    3 c crushed tomatoes (canned is fine)
    1 box Fiber Gourmet Rotini
    splash Braggs
    Italian seasoning to taste (I used about 3 tbsp)

Directions

Put a large saucepan or dutch oven on medium-high heat. Add the mushrooms, and cook until they start to release their water. Add the onion and pepper, saute until the onion starts to turn translucent. In the meantime, put a pot of water on to boil for the pasta. Once it boils, add the pasta and cook according to package directions. While pasta works, add in zucchini and garlic, and let cook down for about 2 minutes. Add the crushed tomatoes, dash of Braggs and italian seasoning. Bring to a simmer and turn down heat. Drain pasta, add to sauce and combine. Makes 6 servings.
