Ingredients

Fresh Eggs (12 large)
Mushrooms (3 large)
Potatoes (3 large)
Cheddar Cheese (1 cup, shredded)
Smart Balance Oil (2 Tbsp)
Directions
* Heat skillet on medium heat
* Chop potatoes into cubes
* Heat 1 Tbsp Oil in skillet
* Add potatoes to skillet and stir well to coat with oil
* Cover potatoes and let cook on medium heat about five minutes
* While potatoes are cooking, lightly beat eggs in large bowl, set aside
* Chop mushrooms and shred cheese, set aside
* Uncover potatoes and add the eggs, stir to mix well
* Add mushrooms and cheese, stir to mix well
* Cover skillet and put in 350 degree oven
* Let cook for about 15-20 minutes
* Remove from oven and let sit, covered, for five minutes
* Serve & Enjoy!
