-1/4 c soy milk
-5/8 c canola oil
-1 tsp mustard
-2 tsp vinegar
-salt & pepper
-dash hot sauce
-2 blocks (preferable frozen and thawed) tofu, cut into bite-size pieces
-5 stalks celery & 2 carrots diced into tiny pieces
Empty out of blender and whisk in mustard, hot sauce, salt, pepper, and vinegar.
This mayo can be used for anything, but this is the perfect amount to use to prepare tofu salad.
Mix tofu, veggies, and mayo together. Add salt and pepper to taste.
Serve in a sandwich on good whole wheat bread with tomatoes.
