Introduction

Ingredients

    1 potato
    1 apple
    1tbsp olive oil
    minced garlic (to taste)
    diced onion (to taste)
    diced green pepper (to taste)
    shredded cheddar cheese

Directions

heat oil in skillet on medium heat
add onions and garlic (stir frequently so nothing burns)
add potatoes first so they can cook a little while you chop the apple
add apple
add green peppers
when the potatoes are soft, lower heat to low and sprinkle with cheese - stir until cheese is melted

makes four servings (about 3/4 cup each)
