Roasted Root Vegetables

Introduction

You can use any root vegetables you like, this recipe is just for what I had on hand. You can use any root vegetables you like, this recipe is just for what I had on hand.
Number of Servings: 2

Ingredients

    Potato
    Parsnip
    Beet
    Onion
    Olive (or whatever you like) oil, or olive oil spray

Directions

Wash vegetables, peel if you wish (I don't) and cut into thin wedges. Toss with a tablespoon of olive oil, or spray pan with olive oil spray, and then spray vegetables as well.

Season with salt and pepper, dry Italian salad dressing mix, or herbs and spices of your choice.

Spread out on sheet pan and roast in 400 degree oven until done on inside, slightly crispy on outside - about 20 minutes.
