Kel's Banana Chocolate Chip Muffins

Introduction

These are great as medium or mini muffins. Kids and adults love them.

I've adapted this recipe from a favourite of mine.

I've adapted this recipe from a favourite of mine.

Number of Servings: 15

Ingredients

    2 cups plain flour
    2 tsps baking powder
    1/2 cup sugar
    1/2 cup chocolate chips
    1/2 tsp salt
    100gms butter (or margarine)
    1 cup Lite milk
    1 egg
    1 tsp vanilla essence
    1 cup (around 3 medium sized mashed bananas)

Directions

1) In a large mixing bowl, with a fork mix together the sifted flour. baking powder, chocolate chips, salt and sugar.

2) In a small pot melt the butter over a medium heat, but don't burn! Take off heat, let cool for a minute or 2 and add milk, vanilla and egg. Mix together well.

3) Add mashed bananas to the liquid mixture.

4) Tip all wet mixture into bowl with dry ingredients. Fold until damp (don't let the mixture get smooth).

5) Place around 1/4 cup of mixture into a 12 medium muffin pan (or a 12 mini muffin pan).

Bake at 220degC (pre-heated oven) for around 12-15 minutes, or until muffins spring back when pressed in the centre.

Mini muffins may take a minute or 2 less in baking time.

Let cool a little and then leave on cooling rack until ready to eat.

Serve and enjoy.
