1 1/2 cups uncooked medium pasta shells
1 large portobello mushroom, chopped
2 garlic cloves, minced
1 tsp olive oil
1 Tblsp flour
1 cup fat free milk
1/2 cup chicken broth
2 1/2 cups cubed cooked chicken breast
1 pkg(10 oz) frozen chopped spinach, thawed
and squeezed dry.
6 Tblsp grated parmesan cheese, divided
couple turns on the pepper mill
Meanwhile, in large nonstick skillet, saute the garlic and mushrrom in the olive oil until fragrant and tender. Sir in flour and cook about 30 seconds. Slowly stir in milk and broth. Bring to a boil, cook and stir for about 2 mins, till thickened.
Add the chicken, spinach, 3 TBLSP of cheese, and pepper. stir till heated.
Drain pasta, toss into vegetable/meat mixture. Sprinkle with remaining cheese.
Makes 4-- 1 1/2 cup servings. I didn't think a cup and a half would fill me up but it DOES. this is DELICIOUS and quick!!
If you have no cooked chicken, place 2 pieces of boneless skinless chicken breast in a foil lined pan. Bake for 25 minutes, then cube.
I do all the prep the night before...VERY quick meal and it has everything in it!!!
