Sweet Potato Waffles

Made over version of an old southern classic!

Top with sugar free maple syrup and toasted nuts (not included in nutritional count)

Number of Servings: 5

Ingredients

    1/4 C. 1% milk
    1 C. roasted, mashed sweet potatoes
    3 T. butter, melted
    2 egg whites, lightly beaten
    2 C. flour
    3 t. sugar

Directions

Combine milk, potatoes, butter and eggs. In another bowl, whisk together flour and sugar. Add flour mixture to milk mixture. Stir well. Cook waffles according to manufacturer's directions.

Yield: ten 4-inch waffles, serving is TWO waffles.

For quicker prep time, roast your sweet potatoes the night before.
