Introduction

This is a hearty alternative to a high carb pizza and its really delicious. You can add whatever veggies you'd like as well as any additional pizza toppings. Number of Servings: 1

Ingredients

    1 cup of Egg Beaters
    1/2 Cup Non-fat Cottage Cheese
    1 Slice of Non-Fat/Low Fat Cheddar Cheese
    1/2 Cup Spinach
    1 Garlic Clove
    2 Slices of Turkey Bacon
    1/4 Cup Tomato Sauce

Directions

Spray medium skillet with PAM/Nonstick spray.
Add Egg Beaters, Spinach, Garlic, Cheddar Cheese, and any other veggies.
Allow eggs to cook over medium heat, moving eggs around allowing uncooked to flow to the bottom. When its almost all the way cooked, top with Cottage Cheese and place in the broiler for about 5 minutes.

Remove from broiler when eggs and cheese are golden brown. Top with Tomato Sauce and Turkey Bacon and any additional toppings.

Let cool for a few minutes and ENJOY
