Poppy Seed chicken

Introduction

This dish can be cooked ahead and covered with foil and frozen for a quick Sunday dinner or a church potluck. It's a good dish to take to shut-ins also! Number of Servings: 8

Ingredients

    4 large chicken breasts, boneless, skinless
    (cut in half - 8 pieces)
    1 can Campbell's cream of chicken soup 98% fat free
    1 1/2 cups sour cream, reduced fat
    Poppy seed (about 4 tbsp)
    2 packs (rolls) of Ritz type crackers, reduced fat
    2 tbsp Brummel & Brown original Spread

Directions

Preheat oven to 375 degrees
Crush ritz crackers. Melt butter and stir into crackers. (you may need to add a little more butter) Press about 2/3 of these around the bottom of a 13 in baking dish.
Lay the cut chicken breasts over the crackers.
In a large bowl mix the soup, sour cream and 3 tbsp of poppy seeds. Spoon/pour this over the chicken.
Sprinkle the reamining crackers over the top of the soup. Sprinkle the remaining poppy seeds over the top. Top will not be covered with the crackers - they will just be in some areas to look nice.
Bake 45 mins and then check by poking down into a chicken breast. May need to go back for 15 more minutes.
