Italian Style Stewed Tomatoes

Introduction

I like to make this as a side dish at dinner. Served with swordfish and a salad makes for a low calorie meal. Sometimes when I am famished and just have to have something late at night I make this dish because it is filling and won't ruin the diet for the day - even if I eat both servings. Ingredients

    2 tbsp Olive oil
    1 baby zucchini, sliced
    3 slices of onions, chopped
    3 cloves of garlic, chopped
    1 tsp Thyme, dried
    1 tsp ground black pepper
    1 can stewed tomatoes
    1 tsp balsamic vinegar
    2 tbsp grated parmesan cheese

Directions

Saute the zucchini, onionss and garlic in olive oil , with the thyme and black pepper, until the onion is nearly translucent but the zucchini still has some crunch to it. Add the stewed tomatoes and heat on a medium low heat and let it simmer until the rest of your meal is ready (make sure you don't let it boil). Before removing from the heat add the balsamic vinegar and stir. Put in two bowls, top with fresh grated parmesan cheese, and serve. Serves two. Recipe may be doubled.
